Toan Pho

Dori | March 22nd, 2010

A hearty broth-based Vietnamese soup most often made with beef, pho (pronounced “fuh”) is eaten for breakfast, lunch and dinner. Different recipes abound, but a traditional beef broth base is made with charred onions, ginger, cloves, cardamom, cinnamon and star anise. Thin slices of beef are added, as well as rice noodles and a variety of garnishes that include scallions, coriander, Thai basil, lemon, lime, bean sprouts, fish sauce.

The tiny place in Warsaw just opened on Chmielna St 5/7. They existed before at the big market and now decided to run a pho restaurant in the centre of Warsaw. They simmer the broth for almost 24 hours!

Toan – what does it mean?  It’s Vietnamese for “perfect.” I’m not sure about the validity of his translation, but I will say this about Toan’s pho broth: it is delicious!
