One of my favourite restaurants Oaxen, sees its final summer, shutting on the 30th September.
17 years ago, chef Magnus Ek opened the restaurant on the island next to a run down quarry, with a menu based on locally sourced ingredients. It wasn’t soon before it was full and a little later on rated as one of the top 50 restaurants in the world. They are soon to re-open on the island of Djurgården by the water but I believe the location in some respect played a large part in my appreciation of the food, the one hour journey and the anticipation of the dinner to come. Another fantastic restaurant, which did a different journey, they moved from the center of Stockholm out to Enskededalen where they forage for herbs. There was a series of fantastic images and a short audio interview with Victor Fransson on the NY times site.
