
The bar trend seems to have no end. After water bars, soup bars, smoothie bars, salad bars, etc. Paris welcomes chef Shinishi Sato and his very trendy Gyoza Bar.
Located in Passage des Panoramas in the desert and tourist trap dine-out area of Grands Boulevards, its minimalism stands out against the red and white checked tablecloths of nearby restaurants. Twelve seats around a large wooden counter and only one dish on the menu (gyoza, the famous Japanese dumplings, in portions of 8 or 12 for 6 or 8 euros), cooked by adorable and smiling Japanese girls in black. The gyoza itself is perfect: crisp on one side, steamed on the other, and filled with pork from star butcher Hugo Desnoyer, leek and ginger. Well done!
